PINEAPPLE DROP COOKIES 
1/2 cup Shortening
1 cup Sugar
1 Egg
1/2 tsp. Vanilla
1/2 cup Drained, Crushed Pineapple
2 Cups Flour
1 tsp. Baking Soda
1 tsp. Salt

Preheat oven to 375°F.

Cream shortening and sugar. Beat in egg, vanilla and pineapple. Sift flour, baking soda and salt. Gradually add to creamed mixture. Drop by teaspoon onto ungreased cookie sheet. Flatten each slightly with finger.

Bake 12-15 minutes.

Give these cookies a splash of summertime with colored sugar and icing dots or add 1 cup of coconut.
