CANDY CANES 
1/4 tsp. cream of tartar
1/2 c. light corn syrup
1/2 c. water
3/4 tsp. peppermint extract
1 tsp. red food coloring
2 c. sugar

Mix together cream of tartar, corn syrup, water and sugar. Stir over heat until sugar dissolves. Cool to 265 degrees (very hard ball stage). Remove from heat and add peppermint. Divide in half and add red food coloring to one part. Pour on greased platters. Pull each part separtely, into ropes. Twist red part around white and cut into 8 inch lengths. Form into candy canes.
