ONION CHEESE BAKE 
1 lg. can onion, minced
2 c. scalded milk, cooled
1 egg, lightly beaten
Cayenne pepper to taste
1 2/3 c. coarsely crumbled salted soda crackers
1 stick plus 1 tbsp. butter, melted
3/4 tsp. curry powder
1/2 c. grated Cheddar cheese
3 tbsp. freshly grated Parmesan cheese
Paprika to taste
3 tbsp. butter
1/3 tsp. salt
1/2 c. grated Cheddar cheese

Saute onion in 3 tablespoons butter until soft. Combine in bowl, milk, egg and cayenne pepper. In another bowl combine soda crackers, 1 stick plus 1 tablespoon melted butter and curry powder. Spread half cracker mixture in a lightly buttered 8-inch square pan.

Top with onions, sprinkle with Cheddar cheese and pour in milk mixture. Sprinkle the remaining cracker mixture over the milk. Top with Parmesan cheese and paprika. Bake in preheated 375 degree oven for 20 to 25 minutes. Cut in squares. Serves 6.
