5 c. zucchini, shredded
2 to 3 carrots, shredded
1 sm. onion, diced
1 can Cream of Chicken soup
1 c. sour cream
1 pkg. Stove Top stuffing
1/4 c. butter, melted
Chicken or turkey, diced (optional)

Mix zucchini, carrots, onions, soup and sour cream. Saute' stuffing mix in butter. Put a layer of zucchini mixture, a layer of crumbs, zucchini and crumbs. Put chicken and/or turkey in layer if wanted. Bake in 9 x 13 inch pan 45 minutes at 350 degrees.
