CALIFORNIA CHICKEN 
2 broiler chickens, cut into pieces or 8 thighs or 8 split breasts
1/4 c. oil
1 clove garlic, minced
1/4 c. green peppers, chopped
6 carrots, cut in quarters
Salt & pepper
2 c. cooking sherry
1 bay leaf
1/4 tsp. rosemary
1/2 c. onion, chopped
4 to 6 sm. white onions

Dampen chicken pieces and season with salt and pepper. Brown pieces in hot oil in skillet. Remove chicken from oil and add garlic, whole onions, green peppers, and carrots to skillet and brown them lightly. Put this mixture plus the browned chicken, cooking sherry, bay leaf and rosemary into a large cast iron pot with lid or cover with heavy duty aluminum foil. Place in smoker or covered grill for 2 to 3 hours, checking after 2 hours or bake in 350 degree oven for 1 1/2 to 2 hours.
