WHIPPED CHOCOLATE CREAM 
1 sq. unsweetened chocolate or more
3/4 c. milk
1 env. unflavored gelatin
1/2 c. water
2 egg yolks
1/2 c. whipping cream
2 tsp. vanilla extract
2 egg whites
Sugar substitutes to taste

Melt chocolate with milk on top of double boiler over simmering water; stir occasionally. Sprinkle gelatin over 1/2 cup water very slowly and let stand about 1 minute. Add to chocolate mixture and stir until completely dissolved. Beat egg yolks until lemon colored; stir part of the hot mixture into egg yolks. Then add back to hot mixture; cook over low. Heat until mixture begins to thicken. Remove from heat combine the rest of the ingredients in a mixing bowl and whip; fold together and chill.
