POTATO-BEAN SALAD 
1 lb. fresh green beans
6 slices bacon
1 lg. fresh onion, chopped
1/4 c. vinegar
2 tbsp. sugar
1 tsp. salt
Pepper to taste
3 c. cooked fresh potato chunks

Snap the beans and cook in boiling, salted water until tender. Drain. Dice the bacon. Cook in large skillet over medium heat until crisp, then remove from skillet. Cook the onion in bacon drippings in the skillet until tender. Add the vinegar, water, sugar, salt and pepper and bring to a boil. Add the potato chunks and beans and heat through. Place in a serving bowl and sprinkle with bacon.
