HOO HOO'S POPOVERS 
1 c. sifted flour
1/4 tsp. salt
1 tsp. sugar
1 tbsp. melted butter or salad oil
1 c. milk
2 lg. eggs

In a large bowl, mix flour, add salt and sugar. Add oil, milk and eggs and beat for "a good long time" (up to 5 minutes), scraping bowl frequently with a rubber spatula. Grease baking cups. Fill about half full with batter. Bake in the center rack of the oven at 375 degrees for 50 to 55 minutes. Keep oven door closed.

Popovers are extremely susceptible to collapsing if a draft hits them just as they are welling above the cup. Remove from pans and serve hot. Makes 12 popovers baked in 1/3 cup size pans or 10 popovers in 1/2 cup size pans.
