SPINACH WITH SOUR CREAM | |
10 oz. pkg. frozen chopped spinach 1 tbsp. chopped onion, may omit 2 eggs, beaten 1/2 c. sour cream 1/2 c. grated Parmesan cheese 1/2 c. grated sharp cheese 1 tbsp. flour 2 tbsp. butter, melted Salt and pepper to taste Cook frozen spinach in small amount of water with onion; drain. Squeeze out as much water as possible. Combine remaining ingredients with spinach and onion. Bake in a greased casserole in 350 degree oven for 25 to 30 minutes or until center is set. Do not overcook as it will separate. May be made a day in advance and refrigerate. Serves 4. |
