OVERNIGHT LAYERED SPINACH SALAD 
1 bunch spinach
1/2 tsp. salt
1/2 tsp. pepper
1 sm. sweet onion
6 to 8 pieces bacon, crumbled
4 hard boiled eggs, crumbled
10 oz. pkg. frozen peas, thawed
1 c. sliced radishes
1 can black olives, sliced
1 c. mayonnaise
1/2 c. Spanish peaches
2 c. grated Swiss cheese

Layer in order, cover with mayonnaise. Top with Swiss cheese. Cover and refrigerate 24 hours. Bacon, peanuts on top just before serving. Cut in squares.

I double recipe for a large crowd.
