BACON - CHEDDAR MUFFINS | |
1 3/4 c. all-purpose flour 1/2 c. shredded sharp cheddar cheese 1/4 c. sugar 2 tsp. baking powder 1/4 tsp. salt 1/4 tsp. ground red pepper 1 beaten egg 3/4 c. milk 1/3 c. cooking oil 6 strips bacon, crisp cooked, drained, and crumbled Grease muffin pan. Sprinkle with cornmeal if desired. In a bowl stir together first 7 ingredients. Make a well in the center. In a small bowl combine egg, milk, and oil. Add this to the flour mixture. Stir until just moistened (batter should be lumpy). Fold in crumbled bacon. Fill muffin cups even with the top of the pan. Bake 400 degrees for 20 minutes or until muffins are golden. Serve warm. Makes 8 muffins. |
