3 1/2 c. flour
1 tsp. baking powder
3 sticks butter
1 c. sugar
2 pkg. Jell-O (any flavor)
1 egg
1 tsp. vanilla

Preheat oven to 400°F. Mix flour and baking powder in medium bowl. Beat butter in large bowl. Gradually add sugar and 1 package of Jell-O until fluffy. Beat in egg and vanilla. Gradually add flour and baking powder mixture. Mix well. Shape dough in 1-inch balls. Place on ungreased cookie sheet. Flatten cookie dough with bottom of a glass. Sprinkle each cookie with remaining package of Jell-O.

Bake 10 to 12 minutes.
