VIRGINIA SCALLOPS 
2 tbsp. butter
1/2 lb. scallops
1/4 lb. mushrooms
1/4 c. onions
1/2 c. mayonnaise
3 oz. Swiss cheese
2 tbsp. wine - sherry
Bread crumbs

Melt 1 tablespoon butter in large skillet, add 1/2 pound scallops, cook only 2 minutes. Remove with slotted spoon.

Add 1 tablespoon butter, 1/4 pound mushrooms, 1/4 cup onions, saute until tender, reduce heat to low.

Mix 1/2 cup mayonnaise, 3 ounces Swiss cheese and 2 tablespoons wine. Stir into pan, adding scallops.

To serve, arrange in baking shells, sprinkle with bread crumbs and broil 1 minute. Serves 6-8.
