EGGNOG QUICK BREAD 
2 eggs
1 c. sugar
1 c. dairy eggnog (not canned)
1/2 c. butter
2 tsp. rum extract
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg

Heat oven to 350 degrees. Grease bottom only of 9 x 5 inch loaf pan. Beat eggs, sugar, eggnog, butter, and vanilla well (rum too) in a bowl. Add flour, baking powder, salt, and nutmeg. Stir until dry ingredients are moistened. Pour into greased pan. Bake at 350 degrees for 45 to 50 minutes. Toothpick in center comes out clean. Cool and remove from pan. Cool completely.
