CARROT BRAN MUFFINS 
1 1/2 c. raw bran
1/2 c. wheat germ
1 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. shredded carrots
1 c. mixed dry fruit
1/2 c. nuts, chopped
2 egg whites
3/4 c. skim milk
1/2 c. molasses
3 tbsp. oil

Preheat oven to 400 degrees. Mix brans. Add all dry ingredients. Add carrots, fruit, nuts, and distribute evenly. Make well in center. In another bowl beat egg whites lightly. Mix in milk, molasses, and oil. Pour into dry ingredients. Stir to moisten. Pour into muffin cups.

Bake 15-20 minutes. Makes 18 muffins. Each muffin container 133 calories and 5.1 grams total fat.
