ORANGE-GLAZED SWEET POTATOES 
8 med. sweet potatoes
1 c. orange juice
2 tbsp. grated orange rind
1 tbsp. cornstarch
3 tbsp. butter, melted
1/3 c. firmly packed brown sugar
1/3 c. sugar
1/4 tsp. salt

Cook potatoes until tender. Cool, peel, and slice. Arrange in a lightly greased baking dish. Combine ingredients in a small saucepan and cook, stirring constantly until thick. Pour glaze over potatoes and bake uncovered at 350 degrees for 30 minutes.
