LAYERED FRUIT AND CHEESE PIE 
1 (9 inch) pie crust, baked or graham wafer crumb crust
8 oz. softened cream cheese
4 tbsp. white sugar
1 tbsp. cream
1 tsp. vanilla
1 c. crushed pineapple (drained)
1 1/2 tbsp. cornstarch
2 tbsp. sugar
1 1/2 c. reserved fruit juice
2 c. blueberries, strawberries or raspberries (choose one)
1 tsp. lemon juice
Whipped cream to garnish

1. Beat cheese with sugar, cream and vanilla until very smooth.

2. Add crushed pineapple and smooth over bottom of pie shell. Chill.

3. Mix sugar and cornstarch together. Add liquid juices and heat gently until thickened and clear.

4. Add berries and lemon juice and pour over cheese mixture.

5. Chill until set and garnish with whipped cream if desired.
