PICKLED FIGS 
7 lbs. figs (not too ripe, with stems)
1 qt. vinegar
7 c. sugar
2/3 tbsp. pickling spice
1 c. baking

Put 6 quarts water in large pan and bring to a boil. Add 1 cup baking soda. Remove from heat and drop figs into water; let stand for 10 minutes. Rinse figs in cold water. Place figs in large pan. Pour vinegar, sugar and spice mixture over figs. Bring to a boil and simmer 30 minutes. Place in jar and seal.
