TACO TIDBITS 
1 lb. ground beef
1 1/4 oz. pkg. taco seasoning mix
1/2 c. shredded sharp Cheddar cheese
1/3 c. sour cream
2 tbsp. mild taco salsa
1 1/4 c. crushed nacho flavored corn chips
Avocado slices, olives & parsley for garnish (optional)

Preheat oven to 350 degrees. In medium bowl, combine beef and seasoning mix. Press 1 tablespoon meat each in bottom and up sides of 30 (1 1/2 inch) muffin-pan cups, leaving a well in center. Combine cheese, sour cream and taco salsa; mix well. Place rounded 1/2 teaspoon of sour cream mixture in each cup. Bake 10-12 minutes or until centers are set and meat is cooked through. Remove from oven. Sprinkle with chips; remove from pans. Serve warm. Garnish with avocado slices, olives and parsley, if desired.

Makes 30 muffins.

Note: Brush avocado slices with lemon and lime juice to keep them from turning brown once they are sliced.
