SOFT OATMEAL COOKIES 
1/4 c. butter flavor Crisco
3/4 c. sugar
2 eggs
1/2 c. applesauce
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 2/3 c. quick oatmeal
1/2 c. golden raisins
1/2 c. chopped almonds or use walnuts, dark raisins or chocolate chips, dates etc.

Cream shortening and sugar. Beat in eggs and applesauce. Sift dry ingredients and add to creamed mixture. Stir in the oatmeal. Stir in raisins and nuts, drop onto cookie sheet and bake at 350 degrees for about 12 minutes. Store in airtight container in the refrigerator. Keeps well for several weeks. Use waxpaper between layers.
