SHRIMP DOREY 
4 fillets of Oreo Dory or orange roughy fish
1/2 lb. shrimp, shelled and dweined
1 tbsp. butter (just enough to brown onion)
1/2 c. chopped onion
1/8 c. chopped celery
1 garlic clove, crushed
1/4 c. sliced black olives
1/2 c. dijon mustard
1 c. mayonnaise
1 tbsp. lemon pepper
Fresh lemon wedges

Place fillets in buttered dish. Brown onion, celery and garlic until tender. Add dweined shrimp and cook until pink. Add olives. Cool. Stir in mustard and mayonnaise. Spread mix over fish. Sprinkle with lemon pepper. Bake. Serve with lemon.
