THREE VEGETABLE CASSEROLE 
4 med. potatoes, thinly sliced
2 med. onions, thinly sliced and separated into rings
4 yellow squash, thinly sliced (can use zucchini)
Salt and pepper
1/2 c. butter
1 c. grated Parmesan cheese
1 c. sour cream

Butter shallow baking dish (2 1/2 quart). Layer half the potatoes, sprinkling with salt and pepper; dot with generous pads of butter. Repeat in same way - layer half the onion and half the squash, sprinkling with salt and pepper and dotting with butter. End with the squash and butter. Cover tightly an bake at 350 degrees until potatoes are tender (about 1 hour). Mix sour cream and cheese; spread on top. Broil until browned in spots (3 - 5 minutes). Serve at once. Approximately 8 servings.
