GREEK BAKLAVA 
2 1/2 lbs. walnut meats, coarsely ground
2 tbsp. cinnamon
1 1/2 lb. unsalted butter
2 lbs. filo pastry dough

SYRUP:

3 c. water
4 c. sugar
1 c. honey
Juice of 1/2 lemon

Mix walnuts with cinnamon. Grease large pan 11x16 with melted butter. Place 6 filo in pan, brushing each generously with melted butter. Sprinkle with thin layer of walnuts and cover with filo.

Alternate in this way until walnuts and filo are used, topping with 6 buttered filo at end. Cut pastry into small diamond shapes. Bake in slow oven (325 degrees) for 1 1/2 hours until lightly browned.

Remove from oven and pour hot syrup over cold baklava. Let stand overnight before removing from pan for syrup to be absorbed. Makes 75 pieces.
