BANANA PEPPER CASSEROLE 
10 banana peppers
8 oz. Velveeta cheese
1 c. cooked rice
1 can biscuits, 5 count
1 can Rotel

Split banana peppers and remove seeds and veins. Cube cheese and microwave until melted. Stir cooked rice into melted cheese. Stuff each pepper with cheese/rice mixture. Roll each biscuit very thin and cut in half. Place in greased baking dish. Spoon Rotel over peppers keep liquid to a minimum. Bake at 400 degrees until biscuits are flaky.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I changed this quite a bit. I didn't stuff the peppers but cut in half, deveined and seeded and then cut again in quarters so they were bite size. I also used 2 cups of cooked rice. I mixed the cooked rice, peppers, cheese and rotel together and put in a 8x11 pyrex dish and added a tsp of salt and garlic powder. I then rolled out the biscuits and put them on top. Cooked covered with foil for 25 mins and then 10 minutes without the foil.
