JAM ROLLS 
3/4 c. milk
1 cake compressed yeast
4 tbsp. lukewarm water
2 tbsp. sugar
1/4 c. melted shortening
1/2 tsp. salt
1 beaten egg
2 1/2 c. sifted enriched flour
1/4 c. jam or marmalade

Heat milk to boiling point, cool until lukewarm. Soften yeast in water. Add sugar, melted shortening, salt, beaten eggs and softened yeast to lukewarm milk. Sift flour into liquid mixture and stir until all ingredients are well mixed. Knead dough in bowl until it no longer sticks to sides. Cover and let rise until double in bulk.

Toss dough on floured board; cut into about 18 pieces of equal size and roll into small balls. Let rise until double in bulk. Make slight depression in center of each roll and fill with jam or marmalade. Place rolls into 3 well greased pie plates. Bake in moderate oven (350 degrees) about 15 minutes. If desired, these rolls may be frosted with a confectioners' sugar icing. These delicious breakfast rolls require no butter. Makes 18 rolls.
