CHOCOLATE CHIP MUFFINS 
1 stick butter, softened
2/3 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
2 tsp. finely grated orange peel or orange marmalade
2 large eggs
2/3 c. buttermilk*
2 c. flour
1 c. semi-sweet chocolate chips

Heat oven to 400°F. Coat muffin cups with cooking spray. In large bowl, with mixer on medium, beat butter, sugar, baking powder, soda, salt, and marmalade until blended. Beat in eggs, then buttermilk. Batter will look curdled. Stir in flour just until blended. Do not over mix. Add chocolate chips. Pour into muffin cups. Sprinkle muffins with topping (below).

Bake 16-18 minutes.

Makes 1 dozen muffins.

Topping:

1 tsp. sugar
1 tsp. unsweetened cocoa powder

Mix topping ingredients.

Tip: to make buttermilk, mix 1 tsp. white vinegar and enough milk to make 1 cup, let stand for 5 minutes.
