PEAR HONEY 
8 c. chopped pears
1 lemon
5 c. sugar
1 tsp. ginger

Wash, core, pare and finely chop and measure pears. Add sliced lemon, sugar, ginger, and 1/2 cup water to pears. Boil until thick. Pour, boiling water, into hot Ball jar; seal at once.
