ELEGANT FRESH MUSHROOM SAUCE 
2 c. sliced fresh mushrooms
1/4 c. sliced green onions
1/2 stick butter
4 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. seasoned salt
1 3/4 c. milk or chicken broth

Pan fry mushrooms and onions in butter in the top of a double boiler over direct heat, about 1 minute. Add flour and seasonings, stir to combine. Add milk, cook until thickened. Add more milk if a thinner sauce is desired. Keep hot over hot water (not more than 30 minutes). Yield: 2 cups.
