RICE PUDDING 
1 1/2 c. uncooked rice
1 egg
1 qt. milk (I use half regular milk, half Carnation)
1 1/2 c. sugar
1 tbsp. vanilla
1 tsp. nutmeg
1/2 stick butter
1 c. raisins
Salt to taste

Start rice in cold water. Cook until tender, not real dry; drain. Add butter and a little salt. Beat the egg in, add the sugar, then the milk, vanilla and nutmeg. Put in the raisins. Mix real good. Pour into lightly greased dish. Bake about 30 minutes at 350 degrees until bubbles form from ends. Will set up as it cooks. DO NOT OVER BAKE.

This recipe is very easy. I used half and half instead of milk and added cinnamon. Cooked for 35 minutes. Absolutely delicious!
