TEXAS CORNBREAD 
1 c. yellow corn meal
2 eggs
1 c. milk
1/2 tsp. baking soda
3/4 tsp. salt
1 can cream style corn
1 jalapeno chopped fine
1 lb. ground beef
1 onion, chopped
1/2 lb. sharp cheese

Fry meat and onion until meat is browned. Mix together in a bowl corn meal, eggs, milk, soda, salt, corn and jalapeno pepper. Heat a well greased iron skillet. Put half the corn mixture in bottom. Add a layer of the meat, onion and cheese topping with the corn mixture. Bake at 475 degrees for about 45 minutes.
