CRISP 8 DAY PICKLE CHUNKS
(SWEET)
 
20 med. pickles
8 c. sugar
2 tbsp. pickling spice
5 tsp. salt
4 c. vinegar

Cover pickles with boiling water. Let stand overnight. In the AM, drain. Repeat 3 more days. On the fifth day, drain and slice into 1/2 inch pieces. Combine remaining ingredients and bring to a boil and pour over pickle chunks. Let stand 2 days. Next day, bring to a boil and pack in hot sterilized jars and seal. Makes 5 to 7 pints.
