BLACK BEANS AND CORN COMBO | |
1 Tbs plus 1 tsp vegetable oil 1 c chopped onion 1 c diced carrots 1 c chopped celery 2 cloves garlic, minced 1/4 tsp dried thyme 1/2 tsp oregano 1 c water 1 pkg instant vegetable flavored broth 1 10-oz pkg frozen corn, thawed 1 tsp Worcestershire sauce 12-oz cooked black beans Heat oil in a large, non-stick skillet over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are tender, adding small amounts of water as necessary to prevent drying. Reduce heat to low. Add remaining ingredients. Cover and cook until heated through, stirring occasionally. |
