SWEET POTATO CASSEROLE 
5 or 6 lg. sweet potatoes
1/4 lb. butter, softened
1 c. brown sugar
2 tbsp. heaping marshmallow creme
1/4 tsp. lemon juice
1 1/2 c. miniature marshmallows

Cook sweet potatoes until very soft. Blend butter, brown sugar, marshmallow creme and lemon juice with mixer until creamy. Peel potatoes, slice in chunks and mix well with other ingredients until mixture is smooth, like mashed potatoes. Place in baking dish. Bake in oven at 350 degrees for 30 to 40 minutes, covered. Then sprinkle with miniature marshmallows; place under broiler until golden brown uncovered.
