FRESH PEACH COBBLER | |
2/3 c. sugar 1 tbsp. cornstarch 1 c. water 3 c. fresh peaches, sliced Cinnamon, dash Few pats of butter 1 c. sifted flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt, optional 3 tbsp. shortening 1/2 c. milk Mix sugar, cornstarch, water in saucepan, gradually stir in peaches; bring to a boil and boil 1 minute, stirring constantly. Pour into 1 1/2 quart baking dish, dot with butter. Sprinkle with cinnamon. Sift together flour, sugar, baking powder and salt. Cut in the shortening until it looks like meal. Stir in the milk. Drop by spoonfuls on hot fruit. Bake at 400 degrees for 25-30 minutes until golden brown. Serves 6-8. |
