SHRIMP AND SCALLOP KABOBS 
1/2 lb. mushrooms
1 green pepper
1 can whole onions
1 can whole potatoes
6 - 10 plum tomatoes
1/2 lb. shrimp
1/2 lb. scallops
3 tbsp. butter, melted
1/2 tsp. tarragon
Salt and pepper to taste

Parboil pepper and cut into square pieces. Clean and devein shrimp. Alternate tomatoes, pepper, mushrooms, shrimp, scallops, onion and potatoes on skewers. Mix butter, tarragon, salt and pepper. Brush over skewers. Place in preheated broiler about 3 inches from heat. Broil 3 - 5 minutes or until lightly browned. Turn, brush with butter mixture and broil 3 - 5 minutes longer.

Can also be made with zucchini instead of potatoes and served over rice.
