SOPA DE ARROZ (Spanish Rice) 
1 c. long grain rice
2 tbsp. oil
2 tbsp. chopped onion
1 1/4 tsp. salt
1/2 c. tomato sauce
2 1/2 c. water
1/4 tsp. black pepper

Put oil in a medium frying pan, and brown rice until golden brown. Add chopped onion, tomato sauce, salt, pepper, and water. Mix slightly. Simmer until rice is cooked.

Serves 6 to 8 persons.
