MAINE BROOK TROUT CHOWDER | |
4 12 inch fresh brookies (if you can catch them!) 6 potatoes, peeled and cubed 6 onions, peeled and cubed 1/4 lb. salt pork, cubed small (or butter if not salt pork) 2 cans evaporated milk (or use 1/2 half evaporated and 1/2 whole milk 4 cups. Skin and remove heads from trout, put in kettle, cover with water and simmer for 5 minutes or until fork tender. Remove trout from water, put potatoes and onions in water. Cook until tender. Meanwhile, saute salt pork, set aside. Remove meat from bones, when vegetables are done. Add everything and reheat. Do not boil! Don is pretty good at catching trout. It is his biggest passion to be out there in the woods. |
