BUTTERMILK PANCAKES | |
2 c. buttermilk or plain yogurt 1/4 c. oil 2 eggs 1/4 c. water (optional) 1 c. white flour 1 c. whole wheat flour (or all white) 1/4 c. sugar or honey 1 tsp. salt 1/2 tsp. baking soda 1 c. frozen blueberries (optional) 1 peeled, cored, chopped apple (optional) In large bowl, mix buttermilk or yogurt, oil, and eggs with a wire whisk. In separate bowl, mix flour, sugar, salt and soda with whisk. (If you use honey, mix it with wet rather than dry ingredients.) Mix all together in the larger bowl. Thin with water until desired consistency; I like it about like cake batter. Fold in fruit, if desired. Mix lightly. Over-mixing will make them tough. Drop by 1/4 cup measuring cupfuls onto hot griddle. Turn when barely bubbling. Makes about 16 pancakes. |
