BEST BUTTERMILK PANCAKES 
2 c. sifted flour
1 tsp. salt
2 1/2 c. buttermilk
1 tbsp. melted shortening
1 tsp. baking soda
1 tbsp. sugar
1 egg, well beaten

Mix all together until just blended. Pour by scant 1/4 cup on hot griddle, greased if necessary. Turn once to cook other side.
