BUTTERMILK PANCAKES | |
1 c. flour 1 tbsp. sugar 1 tsp. baking powder 1 beaten egg 1 tsp. salt 1/2 tsp. baking soda 1 c. buttermilk 2 tbsp. vegetable oil NOTE: Sweet milk may be substituted for buttermilk, but add 2 teaspoons more baking powder and omit the soda. Blend liquids; add dry ingredients and stir until barely blended. The secret of fluffy pancakes is not to beat them. To keep them fluffy, don't stack them. For waffles: Add 2 more eggs and 2 more tablespoons oil. Separate eggs and beat whites separately until fluffy. Lightly fold into the rest of the batter. Bake 3-4 minutes. |
