BROCCOLI SOUFFLE 
2 boxes chopped broccoli (cook 5 minutes, drain)

ombine:

1 c. grated American cheese
1 c. Hellmann's mayonnaise
1 c. mushroom soup
1 sm. onion, chopped
2-4 eggs, well beaten

Mix all together and add broccoli. Pour into sprayed 1 1/2-quart casserole pan. Top with Ritz crackers. Dot with butter. Bake 1 hour at 350 degrees. this can be frozen. Serves 8.
