CREAMY MINT CHOCOLATE PIE 
1 c. butter
1 1/2 c. sugar
2 sq. chocolate, unsweetened, melted & cooled
2 tsp. vanilla
1/4 tsp. peppermint extract
4 eggs
1 baked 8-9" pie shell
Whipped cream topping, if desired

Cream butter and sugar. Add chocolate and vanilla; blend well. Add eggs, one at a time. Beat very well. Beat 5 minutes with mixer. Pour into pastry shell. Chill for 1-2 hours.
