CHICKEN FETTUCINI 
This recipe serves 4.

1 lb. chicken breasts, cut up
3 tbsp. butter
6 garlic cloves, peeled & chopped
6 scallions, chopped
1 tbsp. flour
1/2 pt. heavy cream
1 tbsp. lemon juice
1 c. Swiss cheese (add more if desired)
1/2 c. Parmesan cheese (add more if desired)
Salt & pepper to taste

Optional:

Fresh mushrooms
Fresh broccoli

While the pasta is cooking, saute the chicken breasts in hot butter until firm and white. Stir in garlic and scallions (mushrooms if using) and fry over moderate heat. Stir in flour. Add the cream and lemon juice and stir until hot. Add the cheese and season with salt and pepper. Drain the noodles and toss with chicken and all other ingredients. (Add broccoli last if using.)
