RICE PUDDING 
2 c. cooked brown rice
2 1/2 c. milk
3/4 c. sugar
2 lg. or 3 sm. eggs
1 tsp. vanilla
1/2 c. raisins (optional)

Heat milk to just below boiling and add rice. Beat eggs, add sugar, vanilla and raisins. Combine with rice and milk mixture and pour into shallow baking dish. Bake at 325 for about 25 minutes until custard is firm.
