WATERFOWL GIBLETS WITH MUSHROOMS
AND ONIONS
 
1 lb. white onions, peeled
1 lb. fresh mushrooms
1 lb. giblets (necks, hearts, gizzards)
1/4 c. butter
1 tbsp. lemon juice
Salt
Pepper

Cook onions in salt water 10 minutes. Drain, except for 1/2 cup liquid. Saute mushrooms and giblets in butter and lemon juice 15 minutes. Serves 6.
