CARROT CAKE WITH CREAM CHEESE FROSTING | |
1 1/2 c. oil 2 c. sugar 4 eggs 2 tsp. baking soda 2 tsp. cinnamon 2 c. plus 2 tbsp. flour 3 1/2 c. grated carrots 1/2 c. chopped walnuts 1/2 c. raisins FROSTING: 1 (8 oz.) pkg. cream cheese, softened 1 tsp. vanilla 1/4 lb. butter, softened 1 c. confectioners' sugar Mix first 3 ingredients together. In a separate bowl, mix together next 3 ingredients. Blend both bowls together. Add last 3 ingredients. Grease and flour 9x13 inch pan. Bake at 350 degrees for 35-40 minutes. For frosting, just mix first 3 ingredients, then add confectioners' sugar. |
