BARBECUE SAUCE | |
2 sticks butter 1 1/2 c ketchup 1 c white vinegar 1 1/2 c. Worcestershire sauce 1 c. brown sugar 1/2 c. red cooking wine 3 tbsp. chili powder 3 tbsp. paprika 3 tbsp. ground mustard 1 tsp. salt 1/2 tsp. red pepper Tabasco to taste (optional) Measure first six ingredients into medium saucepan. Cook on medium heat, constantly stirring until butter and brown sugar are melted. Add spices and continue cooking until well blended. Yield: About 3 cups. Will baste about 6 to 9 pounds of oven-barbecued chicken or pork ribs. (Salt and pepper meat; cook uncovered at 350°F for 1 1/2 to 2 hours until done, basting with sauce every 30 minutes.) |
