POACHED PEARS IN RED WINE 
3 oz. sugar
1 lb. hard green pears
1 bottle red wine, Burgundy
1 - 2 cinnamon sticks

Peel pears, leaving stems intact. Place pears in saucepan and add sugar, wine and cinnamon. Simmer slowly, basting frequently, until tender but not mushy. Remove pears carefully, standing them upright. Slowly boiled own the wine mixture until thickened. It will be clear.
