BIG BATCH BRAN MUFFINS | |
3 c. Bran Buds 1/2 c. brown sugar 2 eggs 2 1/2 c. flour 2 1/2 tsp. baking soda 1 1/2 tsp. salt 1 c. boiling water 1/2 c. butter Crisco 2 c. buttermilk 1 to 2 c. raisins (optional) Combine 1 cup of the bran buds, 1 cup boiling water and 1/2 cup butter. Sift flour, soda and salt and add to mixture along with the 2 cups buttermilk. Stir in last 2 cups bran buds and raisins. Do not over beat. May store batter in tightly covered bowl for several weeks. Bake in 400 degree oven for 20 to 25 minutes. Makes about 4 dozen. |
