SPINACH SALAD WITH FETA CHEESE 
3 bunches fresh spinach, cleaned and stemmed
2 red peppers, cut into strips
1/4 lb. crumbled Feta cheese
1 c. chopped hazelnuts
1 clove garlic, chopped
1/2 tsp. salt
8 slices bacon, fried and crumbled
3 hard-boiled eggs, coarsely chopped

DRESSING:

1/3 c. olive or vegetable oil
2 tbsp. lemon juice
Fresh ground black pepper

Place prepared spinach and peppers in salad bowl (make sure spinach is very dry). Combine all dressing ingredients in jar or salad cruet. Shake vigorously. Just before serving, pour dressing over spinach and peppers. Toss. Sprinkle with nuts and cheese. Makes 8 to 12 servings.
